Carnaval is a meticulously planned cocktail bar in upscale San Isidro founded by Aaron Diaz, a bartender with experience at The Aviary in Chicago and posts in Moscow, Mexico City, and Buenos Aires. The bar was recognized as the highest new entry on The World's 50 Best Bars list in 2019. A distinctive feature is its ice room where giant blocks are sculpted into artistic shapes, adding spectacle to each cocktail. The 'Gran Carnaval' tasting menu features seven house specialities, including the 'Alegria, alegoria' served in a ceramic cup resembling a Chupa Chups lollipop dispenser.
